West Windsor Township Grease Information
The West Windsor Township Grease Control Ordinance has been written to establish uniform design, maintenance and monitoring requirements for controlling the discharge of grease from food service facilities within West Windsor that discharge into the Stony Brook Regional Sewage Authority treatment system. This ordinance went into effect on January 18, 2009.
These web pages are to assist retail food establishments as well as shopping centers and office parks in compliance with this ordinance. Applications and resources are also provided for new facilities undergoing initial design review. Information and helpful links are provided below. Information for residents is also provided since every kitchen can help solve this township-wide problem.

in Retail Food Establishments Management
Train, monitor and remind employees of proper grease control practices.- Have grease interceptor cleaned before the grease and solids layers combined occupy 25% of the depth of the grease interceptor. Inspect tanks regularly to ensure available storage capacity.
- Ensure food waste is placed in trash NOT down the drain! Food particles in the waste stream will allow grease globules to bind together and clog the sewer system.
- Mandate the “Dry Wiping of Grease” from dishware, pots, spills, waste containers and equipment. Use rubber spatulas freely and paper towels when necessary for dry wiping. Avoid wet spraying as the sole method of pre-wash.
- Provide a spill kit for dry cleanup of grease spills and place waste in the trash.
- Provide strainer baskets in all drains likely to catch food waste.
- Do not allow flushing of grease or food waste into toilets, floor drains, or storm sewers.
- Provide grease waste receptacles that are securely covered, conveniently located and placed upon a non-absorbent surface. Inspect often to prevent overflow.
- Capture wastewater from hood cleaning before it is discharged into floor drains, troughs or utility sinks. Dispose of as grease waste. If a professional service is used, discuss procedures to ensure compliance.
- Recycle golden oil from fryers and grease recovery devices.
- Supervise professional grease interceptor pumping and cleaning services to ensure compliance.
- Remove food grinders and disposals from retail food establishments.
- Periodically utilize a licensed professional to inspect grease interceptors to ensure the integrity and continued proper operation.

DO NOT rinse food particle down the drain; place in trash.- DO NOT remove strainer baskets which have been placed in floor drains to catch food waste.
- DO NOT flush grease or food waste down toilets.
- DO NOT direct grease waste or spills into storm sewers.
- DO NOT use hot water or steam to clean grease interceptors.
- DO DRY WIPE grease from dishware, pots, spills, waste containers, counters and equipment with a rubber spatula or paper towel.
- DO dry clean-up grease spills using a SPILL KIT. Do not flush into floor drains.
- DO close grease recycle bins and clean up spills promptly. Advise management immediately if container is more than ½ full.
- DO follow instructions on the proper cleaning procedures for grease interceptors.
- DO report foul odors or problems associated with the grease interceptor.

Grease Control Private Sewer Collection Systems
- DO establish a regular maintenance plan for your system and contract with a professional service for a semi-annual cleaning schedule as a minimum.
- DO self-inspect the system on a regular basis to monitor for grease accumulation.
- DO self-inspect tenants to ensure proper grease control at each establishment.
- DO utilize a pressure Jet/Vac Cleaning Truck for sewer line cleanings.
- DO plug the downstream line while conducting jet/vac cleanings.
- DO provide 48-hours advance notification to West Windsor Township Sewer Department at (609)799-8370 for sewer line cleaning operations.
- DO provide advance notice to West Windsor Township Emergency Services at (609)799-2400 prior to confined space entry into the sewer system.
- DO follow established OSHA safety procedures for confined space entry.
- The following equipment must be onsite:
- Tripod
- Harness
- Gas Meter
- DO NOT allow grease residue to accumulate within the sewer system.
- DO NOT allow sanitary sewage with FOG in excess of 100 ppm to be released into the Township’s sewer main.
- DO NOT use an under-sized nozzle.
- DO NOT allow debris to enter West Windsor Township’s Sewer System, ie., utensils, dishes, rags and large food particles.
- DO NOT wait for a sewage back-up to institute proper grease control at your property.
